The Kitchen Academy, situated in the island town of Enniskillen, is the culinary creation of Chef Joe Kelly, who is a native of Enniskillen but spent most of his professional career running highly regarded restaurants and bakeries across the USA including the world famous Boudin Sourdough Bakery in San Francisco.
When Joe decided to return home to Ireland he took up residency at the popular Belle Isle Cookery School where he was very pleasantly surprised by the dramatic change in Ireland’s culinary landscape.
“I was amazed at the appetite for cooking that had developed in Ireland, and was instantly hooked on passing on my skills.”
Joe realised his love of teaching cookery and has now decided to set up his very own cookery school in his native homeland.
The new cookery school is offering a wide range of day and evening classes to encourage fans of good food to develop their palates and discover what they love to cook and eat.
Seafood, bread making and dinner party courses feature on the programme offering.
Everyone can take part, from the novice looking to build skills, or a seasoned home cook ready to hone their expertise with a world-class chef.
Kelly’s inspiration can be found in the verdant Fermanagh countryside and the superb local ingredients; fresh fish, lamb, fruit and vegetables, herbs, organic produce, cheese and dairy.
Kelly and his team are focused on making learning enjoyable and informative. “We’ll be sharing plenty of new tips, ideas and tricks of the trade. But our main priority is making it fun.”
In a county boasting more water than land, and with public jetties within metres of the Kitchen Academy, the town of Enniskillen and Fermanagh’s lakes offer many other wonders on the menu.
A short cruise tour over placid waters leads to lush green islands with early Christian and mysterious Neolithic ruins, while Enniskillen Castle Museum Complex and the magnificent Castle Coole stately home and gardens are both within walking distance from the Kitchen Academy.
